What I can tell you is that my 1995 model weighs 6500lbs. It came out with a 5.7L V8. But mine was re-fitted with the Big Block 454, 7.4MPI engine which gives 310bhp.
One could order the Big Block 454 as an extra from the factory - so it was available for fiesta vee's. Most of the Fiesta Vee 265's over here are fitted with the 5.7L. I suggest that you get this engine. The 4.3 will be too small for your boat.
With the 7.4 engine you will get 5 knots more - but more fuel consumption and more weight - and a crammed engine bay because the 7.4 is huge.
If the price of diesel is not very high - go for diesel.
