Others have more experience of this than me, but it sounds like it could be the throttle potentiometer, or its wiring under the dashboard near the heater fan....
As orbis48 said, this could be the MAF (mass air flow) sensor. If you disconnect it and go for a drive do the symptoms disappear? You can leave it disconnected...
