Hi All,
I've just given this recipe to Heather, who runs Oxveg and is planning
an event for Shrove Tuesday, but you may all like it.
I call them breakfast pancakes but you can eat them at any time!
The batter should be quite thick because the pancakes should be thicker
than the traditional variety and no more than 7 inches in diameter.
Let me know how they go down and I'll pass any praise on to Alex in
Massachusetts, who gave me the recipe after we'd eaten them most days of
the three
weeks I spent at her house 18 months ago.

Breakfast pancakes
For 2 people, mix one mug of any sort of plain flour and 1 level
teaspoon of baking powder in a large bowl.
Add one mug (same size) of soya milk and a mashed ripe banana and beat
well with a wooden spoon. (You can use a mixer but it's no quicker and
it's easier to wash a bowl than a mixer. You can also omit the banana
but it definitely improves the flavour.)
Makes 2 pancakes each.
Serve with maple syrup or fruit salad and plain soya yoghurt (e.g.
Yofu). They keep you going all morning and are suitable not only for
vegetarians and vegans but for all cultures, e.g. Indians, who do not
eat eggs, as well as those with an intolerance to dairy products.
