The Book of Apples Joan Morgan is a good place to start:
http://www.amazon.co.uk/exec/obidos/ASIN/0091883989/202-04
32544-7483069

Keepers Nursery have lots of good technical information
(pollination, habit, disease resistance, vigour) for example:
http://www.keepers-nursery.co.uk/product.aspx?id=ASHKER&v=
4

Pears are harder to find good info on, I'm currently trialling some
rare varieties acquired as grafting wood from Brogdale.

Grafting is very easy, honestly! The first time I did it I had 50%
success rate, now nearly 100% on healthy stocks. I did a leaflet
on it for Apple Day in our 'community' orchard, I could put it online
if anyone is interested (assuming I can get the files off my old
powerbook).
